Country Loaf Bread formulas can differ from country to country, even from baker to baker! In this Workshop, baker Jim Haas will guide you through a good rustic round loaf formula, explaining and teaching the essential baking processes and techniques used by home bakers and aspiring professional bakers alike. Our workshops are very “hands-on”, so be prepared to really get your hands in the dough!
What you will learn:
– Flour overview: difference, benefits, qualities
– Yeasted vs naturally leavened bread
– Overview of baker’s math
– desired dough temperature and how it is calculated
– Fermentation
– Kneading (VERY important!)
– Forming
– Scoring (sashing) loaves
– Equipment/accessories needed for home bread baking
– Storing bread
What to bring:
– A notepad and a pen to make notes
– An apron
– A desire and motivation to learn new things
There is a participation fee of $110 that is paid when you register online at www.riseupbakeryvt.com (Please indicate the participant’s full name in the comments box.) Ingredients and all printed materials are provided by the bakery and each participant will leave with a sourdough loaf and sourdough starter.
Cancellation Policy: Should you decide to cancel your registration, you are entitled to a full refund upon a minimum 14-day notice (minus any applicable PayPal fees). If your cancellation is between 14 and 4 days, we can offer the full refund (minus PayPal fees) if we can fill your spot at the workshop. If less than 4 days we will unfortunately not be able to provide a refund.
Please wear clothes that will be comfortable for baking
