We received much enthusiastic feedback from so many of the participants after last year’s Country Loaf workshop, so we have decided to offer it again for the community of bakers who may have been unable to attend and those missed it. Country Loaf Bread formulas can differ from country to country, even from baker to baker! In this Workshop, baker Jim Haas will guide you through a good rustic round loaf formula, explaining and teaching the essential baking processes and techniques used by home bakers and aspiring professional bakers alike. Our workshops are very “hands-on”, so be prepared to really get your hands in the dough!
What you will learn:
– Flour overview and how they differ
– Yeasted vs naturally leavened bread
– Overview of baker’s math
– DDT (desired dough temperature) and how it is calculated
– Fermentation
– Kneading (VERY important!)
– Forming
– Scoring (slashing) loaves
– Equipment/accessories needed for home bread baking
– Storing bread

What to bring:
• a notepad and a pen to make notes (but we can provide paper and pencils if you need)
• an apron
• a cheerful mood and a desire to do something new
