We at Rise Up Bakery are thrilled to offer a workshop on making and baking a version of traditional German Farmer’s Bread that is widely popular throughout the towns and villages of southern Germany, known as “Schwäbisches Bauernbrot”.
Spending a productive afternoon learning to make this is a hearty and nutritious rustic loaf, you will learn to master the principles and techniques that you can apply to a wide range of other breads that might interest you. At Rise Up Bakery, we are very passionate about encouraging and helping the community master these millennium old traditions.
At this workshop you will learn about:
- the attributes of the different flours,
- yeasted vs sourdough bread
- baker’s math and how to calculate dough temperature
- pre-fermented doughs
- fermentation methods
- kneading technique (Very important!)
- pre-shaping the loaf, bench rest, and the final form
- scoring (slashing) loaves: how and why
- the equipment/accessories needed for home bread baking, and
- bread storage

All ingredients are provided by the bakery, and each individual will make their own loaf to take home.
What to bring with you:
– an apron
– a face mask

You will be working with flour, so please dress accordingly.
